A traditional salt-free pickle from Kiso, Nagano. Red turnip leaves fermented solely by lactic acid bacteria without salt—rare worldwide.

Sunki is an exceptionally rare pickle worldwide: it uses no salt at all. Blanched red turnip leaves are mixed with previous year's sunki as a starter and lacto-fermented. Without salt, shelf life is limited, making it a winter-only food. Rapid acid production by lactic acid bacteria suppresses spoilage organisms—a preservation mechanism independent of salt. Said to have emerged because salt was scarce in Kiso's mountain villages, this pickle is fermentation ingenuity born from constraint. Recently, the unique lactic acid bacteria in sunki have drawn scientific attention. The specialized bacterial community surviving without salt is being studied for probiotic potential. A prime example of fermentation ingenuity born from constraint becoming a subject of modern scientific research.
