Fermentation is an inherently uncertain process. Even with identical ingredients and procedures, microbial behavior varies subtly each time—temperature, humidity, house microbiome, even the maker's condition all matter. From a quality control perspective, this uncertainty is risk. But seen differently, it is the source of diversity that defies homogenization. Because of uncertainty, each year's batch carries tension, and flavors beyond expectation sometimes emerge. Uncertainty in fermentation is not noise to be eliminated but a creative force that generates richness. In a society demanding uniformity like industrial products, fermentation's worldview of positively embracing uncertainty suggests an alternative. Not pursuing perfection paradoxically yields richness—fermentation embodies this paradox.
