A system used based on its inputs and outputs while its internal workings remain incompletely understood. This applies to many fermentation processes.
Fermentation contains numerous black boxes not fully elucidated by science. Why does brewing in the same facility produce the same flavor? Why do certain microbial combinations stabilize? Why is an experienced craftsperson's intuition sometimes more accurate than scientific analysis? Even modern analytical tools cannot fully explain all fermentation processes. But being a black box does not mean unknown—it means there is richness not yet fully articulated. Excellent products can be created without complete understanding. That fact speaks to fermentation's depth. Recent AI and metagenomic analysis have begun illuminating the black box's interior. Yet as more is revealed, the vastness of the unknown becomes apparent. Fermentation's black box, rather than shrinking with scientific progress, seems to deepen.
